Embellished Rice Pilaf
This recipe is one of my favorite ways to elevate rice from a basic carb to a stand out side dish.

- 1 cup long grain brown rice, rinsed and drained
- 2 cups water
- 1 large onion, diced
- ¼ cup raw sunflower seeds or pine nuts
- 2 tsp salt
- 2 Tbsp extra virign olive oil
Saute onion in olive oil until translucent, but not browned.
Add sunflower seeds or pine nuts and rice and stir constantly until you smell a nutty aroma. Watch the sunflower seeds or pine nuts as they can burn quickly.
Add water and salt. Bring to a boil, cover and reduce to a simmer. Cook for 50 minutes or until all water is absorbed.
Remove from heat, let rest for 10 minutes. Fluff with a fork before serving.
